What you need

pinch salt

cup granulated sugar

tbsp unflavored gelatin

cup semisweet chocolate chips
cup cornstarch

cup powdered sugar

cup milk
Instructions
1. In a stand mixer bowl, combine 1/2 cup of water and unflavored gelatin. Stir and let it bloom. 2. In a saucepan, combine granulated sugar and the remaining 1/2 cup of water. 3. Heat the sugar mixture on the stove, stirring until sugar dissolves, then continue heating until it reaches 240°F (115°C). 4. With the mixer on low, carefully pour the hot sugar syrup into the bloomed gelatin. 5. Increase the mixer speed to high and whip for 10-15 minutes, until the mixture is thick, white, and fluffy. 6. Prepare a baking dish by greasing it and dusting it with a mixture of powdered sugar and cornstarch. 7. Pour the marshmallow mixture into the prepared dish and spread it evenly. 8. Dust the top with more of the powdered sugar and cornstarch mixture. 9. Let the marshmallow set for at least 4 hours or overnight. 10. Once set, turn the marshmallow block out onto a dusted surface and cut into cubes. 11. Toss the cubes in the remaining powdered sugar mixture to coat all sides. 12. To make the hot chocolate, combine chocolate chips, a pinch of salt, and milk in a saucepan. 13. Heat gently, stirring until the chocolate is melted and the mixture is smooth. 14. Pour the hot chocolate into a mug and top with a homemade marshmallow. 15. Optionally, toast the marshmallow with a kitchen torch before serving.
