What you need

tsp baking soda

cup all purpose flour

cup buttermilk

egg

cup molasses
cup granulated sugar

cup coconut oil

tsp nutmeg

tsp ground ginger

tsp cinnamon
cup light-brown sugar

Instructions
- In a pot, combine chopped apples, brown sugar, cinnamon, ginger, and nutmeg. - Add 3 cups of water and simmer over medium heat stirring occasionally, until the apples are soft and thick like apple butter. Add more water as needed to prevent sticking. Let cool. - Preheat oven to 350°F (175°C). Grease and line 8-inch round cake pans . - Cream butter and white sugar until fluffy. Mix in molasses, eggs, and buttermilk. - Sift in flour, baking soda, salt and spices. Gradually mix into wet batter. Divide batter evenly among 6 pans (about 1 cup per pan). Bake for 12–15 minutes. - Let layers cool completely on a rack. -Stack cake layers with a generous spread of apple filling between each. Wrap tightly and refrigerate overnight to let the flavors meld and the layers soften.View original recipe
