Fluffy, deep-fried pastries inspired by the Disney movie 'The Princess and the Frog'. These beignets are drizzled with honey and generously coated in powdered sugar, perfect for a special breakfast or snack.

1. In a large bowl, whisk together warm water and yeast. Set aside to bloom. 2. In a separate bowl, combine evaporated milk, sugar, salt, an egg, and vanilla. 3. Pour the wet mixture into the yeast mixture. 4. Add 2 cups of flour and combine. 5. Stir in melted butter. 6. Add the remaining 2 cups of flour and mix until a shaggy dough forms. 7. Turn the dough onto a floured surface and knead until a smooth ball forms. 8. Place the dough in an oiled bowl, cover, and let it rise for about 2 hours, or until doubled in size. 9. Punch down the dough to deflate it. 10. On a floured surface, roll the dough out to about 1/4 inch thickness. 11. Cut the dough into squares or rectangles. 12. Let the cut dough rest for 10 more minutes. 13. Heat oil in a skillet and fry the beignets until they puff up. 14. Flip the beignets and fry the other side for one more minute until golden brown. 15. Remove from the oil and drain on a plate. 16. Drizzle with honey and dredge in powdered sugar. 17. Serve warm with café au lait.
